Tandoori Chicken Salad Recipe:
Ingredients:1 Chopped or Shredded Boneless Chicken Breast (cooked however you want it—I boiled mine)
1 Tbsp. Chopped Cucumber
1 Tbsp. Chopped Red Onion
1 Tbsp. Chopped Mango
1 Tbsp. Fat Free Mayo
1 Tsp. Tandoori Paste (you can find this in the ethnic section of grocery stores. It’s an authentic indian combination with spices)
½ Freshly Squeezed Lime
2 slices Whole Wheat Bread
Make a day ahead, mix all ingredients well & spread on wheat bread. Double or Triple recipe to make as many servings as you like & store for up to a week. 242 Calories, 23g Carbs (12 net), 11g Fiber, 20g Protein
My calorie count was a little lower than I want it to be today so I got a skinny vanilla latte. I think the only mistake with that is that I should have gotten in and had it with my breakfast.
